“Pan con Tomate” or Tomato Bread is a traditional Catalan plate known as “Pa amb tomàquet.” It is considered a staple in Catalan cuisine and a traditional national dish of Spain.
I make a very simple version of this traditional dish. It consists of bread (which may or may not be toasted) topped with tomato that is seasoned with garlic, olive oil, and salt.
Trust me, once you try this, you will be replacing garlic bread with it and/or serving it next to your favorite charcuterie board in no time!
Prep time: 20min Total time: 20min
Serves: 5ppl
Ingredients:
4 tomatoes
1 garlic clove, peeled and grated
3 tbsp of extra virgin olive oil or olive oil
1 tbsp Kosher or Maldon Salt
1 loaf of your favorite bread
Directions:
Preheat oven to 400°. Slice the bread into ½ inch slices and drizzle with olive oil. Bake the bread 15 minutes, flipping halfway.
Cut tomatoes in half and in a bowl, grate the flesh of the tomatoes until you have reached the tomato skin.
Once you have grated all the tomatoes, strain the grated flesh in a fine strainer, discard the liquid and keep the rest.
Mix in the grated garlic, 3 tbsp of olive oil, and salt. Serve on top of the toasted bread.
